Quick BBQ Chicken and Sweet Potato Wraps

2 boneless, skinless chicken breasts

1 cup barbecue sauce (store-bought or homemade)

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat tortillas or wraps

1 cup fresh spinach leaves

½ cup shredded cheddar cheese (optional)

Lime wedges for serving

Cook the Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes in olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes, or until tender and slightly crispy, flipping halfway through.

    Prepare the Chicken: While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. Heat a non-stick skillet over medium heat and add the seasoned chicken. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center.

      Add BBQ Sauce: Once the chicken is cooked, brush both sides generously with the barbecue sauce and cook for an additional 2-3 minutes until the sauce is caramelized and sticky.

        Shred the Chicken: Remove the chicken from the skillet and let it rest for about 5 minutes. Then, shred it using two forks.

          Assemble the Wraps: Lay out the whole wheat tortillas on a clean surface. Start by adding a handful of fresh spinach to each tortilla, followed by a scoop of roasted sweet potatoes and a generous portion of shredded BBQ chicken. If using, sprinkle some shredded cheddar cheese on top.

            Wrap It Up: Fold the sides of the tortilla inward, then roll from the bottom up to secure all the fillings tightly. Repeat with the remaining tortillas.

              Serve: Slice the wraps in half diagonally and serve with lime wedges on the side for drizzling.
