Quick BBQ Chicken and Sweet Potato Bowl

2 boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand or homemade)

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup cooked quinoa (optional)

1 cup black beans, rinsed and drained

1 avocado, diced

½ cup corn (fresh or canned)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts with half of the BBQ sauce. Allow them to marinate for at least 15 minutes (or up to 30 minutes for more flavor).

    Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them evenly on a baking sheet. Roast in the oven for 25-30 minutes, or until fork-tender and lightly caramelized, flipping halfway through.

      Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and reserve the leftover sauce. Cook the chicken for about 6-7 minutes on each side, or until cooked through (internal temperature should reach 165°F/74°C). Brush with the reserved BBQ sauce during the last minute of cooking.

        Prepare the Bowls: In each bowl, start with a base of quinoa (if using) or simply layer the roasted sweet potatoes. Slice the grilled BBQ chicken and place it on top.

          Add Toppings: Evenly distribute the black beans, diced avocado, and corn over each bowl. Drizzle any remaining BBQ sauce if desired.

            Garnish & Serve: Sprinkle with fresh cilantro and serve with lime wedges on the side for an extra zesty touch.
