Ingredients

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

3 cloves garlic, minced

Salt and pepper, to taste

1 pound fresh green beans, trimmed

1 teaspoon red pepper flakes (optional)

2 tablespoons butter

1 tablespoon chopped fresh parsley (for garnish)

Instructions

Preheat the Oven:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      Prepare the Marinade:

In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.

          Marinate the Salmon:

Place the salmon fillets on the prepared baking sheet. Pour the marinade over the salmon, ensuring they are well-coated. Let it marinate for 10-15 minutes while you prepare the green beans.

              Prepare the Green Beans:

In a large pot, bring salted water to a boil. Add the trimmed green beans and blanch them for about 3-4 minutes until they are bright green and tender-crisp. Drain and immediately plunge them into a bowl of ice water to stop the cooking.

                  Sauté the Green Beans:

In a skillet, melt the butter over medium heat. Add the blanched green beans, and sauté for about 3-4 minutes. Add red pepper flakes (if using) for an extra kick and season with salt and pepper to taste.

                      Bake the Salmon:

Place the marinated salmon in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.

                          Serve:

Remove the salmon from the oven and let it rest for a couple of minutes. Plate the salmon fillets with a generous serving of garlic green beans on the side. Sprinkle with fresh parsley for garnish.

Enjoy your delicious and healthy Lemon Zest Baked Salmon with Garlic Green Beans!
