1 cup canned pumpkin puree

1 cup Greek yogurt (plain)

3/4 cup brown sugar

1/2 cup maple syrup

1/4 cup coconut oil, melted

2 large eggs

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped walnuts (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, Greek yogurt, brown sugar, maple syrup, melted coconut oil, and eggs. Mix thoroughly until smooth and well incorporated. Add the vanilla extract and stir to combine.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground ginger, ground nutmeg, and salt.

        Combine Dry and Wet: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to over-mix. If using, fold in the chopped walnuts for added texture and flavor.

          Swirl the Yogurt: Pour about half of the batter into the prepared baking pan. Drop spoonfuls of Greek yogurt over the batter, then pour the remaining batter on top. Use a knife to gently swirl the yogurt into the batter to create a marbled effect.
