1 cup canned pumpkin puree (or freshly roasted pumpkin)

2 cups spelt flour

1/2 cup walnuts, roughly chopped

1/4 cup honey or maple syrup

1/2 cup warm milk (dairy or plant-based)

1/4 cup olive oil or melted coconut oil

2 large eggs

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

Optional: pumpkin seeds for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), warm milk, olive oil, and eggs. Whisk until smooth and well incorporated.

      Combine Dry Ingredients: In a separate bowl, mix together the spelt flour, chopped walnuts, ground cinnamon, ground nutmeg, baking soda, baking powder, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.

          Transfer to Pan: Pour the batter into the prepared loaf pan. Smooth the top with a spatula, and sprinkle pumpkin seeds on top if desired for an extra crunch.

            Bake: Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. The edges should be golden brown.
