Ingredients
  

  • 1.5 cups whole wheat flour
  • 1 cup canned pumpkin puree
  • 0.5 cup unsweetened applesauce
  • 0.5 cup maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 0.25 cup chopped walnuts or pecans (optional)
  • 0.25 cup dark chocolate chips (optional)

Instructions
 

  • Prepare the Air Fryer: Preheat your air fryer to 325°F (160°C). If needed, line your muffin tray with silicone muffin liners or spray with a light coat of cooking spray.
  • Mix Dry Ingredients: In a mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, spices (cinnamon, nutmeg, ginger), and salt until well combined.
  • Combine Wet Ingredients: In another bowl, mix the pumpkin puree, applesauce, maple syrup (or honey), eggs, and vanilla extract until smooth and creamy.
  • Incorporate Dry and Wet Mixtures: Gradually add the dry mixture into the wet ingredients, stirring gently until just combined. Be careful not to overmix. If desired, fold in the walnuts or pecans and dark chocolate chips at this stage.
  • Portion the Mixture: Use a muffin scoop or spoon to fill each muffin cup with the batter, filling them about 0.75 full to allow for expansion during cooking.
  • Air Fry the Muffins: Carefully place the muffin tray into the preheated air fryer basket. Air fry for about 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Once cooked, allow the muffins to cool in the tray for about 5 minutes before transferring them to a wire rack to cool completely.
