2 cups rolled oats

1 cup pumpkin seeds

1 cup chopped nuts (walnuts or pecans)

1/2 cup maple syrup or honey

1/2 cup pumpkin puree

1/4 cup coconut oil (melted)

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup dried cranberries or raisins (optional, for added sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper to prevent sticking.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped nuts, ground cinnamon, nutmeg, ginger, and salt. Stir well to combine.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup (or honey), pumpkin puree, melted coconut oil, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. If you’re adding dried cranberries or raisins, mix them in at this stage.

          Transfer to Baking Sheet: Spread the granola mixture evenly onto the prepared baking sheet. Press down firmly with the back of a spatula to form a compact layer; this helps to achieve those lovely clusters.

            Bake: Bake in the preheated oven for 25-30 minutes, or until golden brown, stirring halfway through the baking time for even cooking. Keep an eye on it to prevent burning.

              Cool: Remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will harden and form clusters.
