Ingredients

For the Pumpkin Gnocchi:

1 cup pumpkin puree (freshly roasted or canned, ensure it's not spiced)

1 large egg

1 ½ cups all-purpose flour (plus extra for dusting)

1 teaspoon salt

A pinch of nutmeg

A pinch of black pepper

For the Brown Butter Sauce:

½ cup unsalted butter

6-8 fresh sage leaves

Salt to taste

Freshly grated Parmesan cheese (for serving)

Chopped walnuts or pecans (optional, for garnish)

Instructions

Prepare the Gnocchi Dough:

    - In a large mixing bowl, combine the pumpkin puree, egg, salt, nutmeg, and black pepper. Mix until well combined.

      - Gradually add the flour, one cup at a time, mixing with your hands or a fork until a soft dough forms. It should be slightly tacky but not overly sticky. Adjust flour as necessary.

        Form the Gnocchi:

          - Turn the dough out onto a floured surface. Divide it into 4 equal parts. Roll each part into a long rope, about ¾ inch in diameter.

            - Cut the rope into 1-inch pieces. To shape the gnocchi, gently press each piece with a fork to create ridges (this helps the sauce cling better). Place the shaped gnocchi on a floured baking sheet.

              Cook the Gnocchi:

                - Bring a large pot of salted water to a boil. Carefully add the gnocchi in batches. They will sink and then float to the top when cooked, which takes about 2-3 minutes.

                  - Once they float, let them cook for an additional 30 seconds, then remove them with a slotted spoon and place them on a plate. Repeat with the remaining gnocchi.

                    Make the Brown Butter Sauce:

                      - In a large skillet over medium heat, melt the butter until it starts to foam. Add the sage leaves to the pan.

                        - Continue cooking until the butter turns a golden brown and is fragrant, stirring occasionally (about 4-5 minutes). Be careful not to burn the butter.

                          - Remove the skillet from the heat and season with a pinch of salt.

                            Combine Gnocchi and Sauce:

                              - Add the cooked gnocchi directly to the skillet with the brown butter sauce. Toss gently to coat each piece evenly. If desired, add chopped walnuts or pecans for crunch.

                                Serving:

                                  - Plate the gnocchi and drizzle with any extra brown butter sauce from the skillet. Top with freshly grated Parmesan cheese and serve immediately. Enjoy your delightful pumpkin gnocchi!
