1 cup pure pumpkin puree (not pumpkin pie filling)

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup coconut sugar or brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon baking powder

2 cups rolled oats

1/2 cup dark chocolate chips (or mini chips)

1/4 cup chopped nuts (walnuts or pecans, optional)

Pinch of salt

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the pure pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy.

      Add Sugars and Spices: Stir in the coconut sugar, ground cinnamon, ground nutmeg, and a pinch of salt into the wet mixture until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, mix together the rolled oats and baking powder. Gradually add this dry mixture to the wet mixture, stirring until just combined.

          Add Chocolate and Nuts: Fold in the dark chocolate chips and nuts (if using). Make sure everything is evenly distributed throughout the batter.

            Transfer to Baking Dish: Pour the batter into the prepared baking dish. Use a spatula to spread it out evenly in the pan.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the edges start to turn golden brown and a toothpick inserted in the center comes out clean.

                Cool and Cut: Allow the bars to cool in the baking dish for about 10 minutes before transferring to a wire rack to cool completely. Once cooled, lift the bars out using the parchment overhang, and cut into squares or rectangles.

                  Store: Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate for longer freshness.
