1 cup rolled oats

1/2 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup pumpkin puree (canned or homemade)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/3 cup coconut oil or unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark)

1/4 cup chopped nuts (optional, for added crunch)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, all-purpose flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt. Stir until well mixed.

      Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, melted coconut oil (or butter), and vanilla extract until you have a smooth mixture.

        Blend Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix. Fold in the chocolate chips and nuts if using.

          Transfer to Baking Dish: Pour the batter into the prepared baking dish and spread it evenly using a spatula.

            Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. The edges should be slightly golden brown.

              Cool & Slice: Once baked, allow the bars to cool in the dish on a wire rack for about 10 minutes. Use the overhanging parchment paper to lift the bars out of the dish and cool completely on the rack before slicing into squares.
