1 ripe banana (medium-sized)

1 cup pumpkin puree (canned or fresh)

2 large eggs

1/4 cup honey or maple syrup

1/4 cup Greek yogurt or applesauce

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup chocolate chips or nuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Blend the Wet Ingredients: In a blender, add the ripe banana, pumpkin puree, eggs, honey (or maple syrup), Greek yogurt (or applesauce), and vanilla extract. Blend until smooth and well combined.

      Combine the Dry Ingredients: In a mixing bowl, combine the rolled oats, baking powder, baking soda, ground cinnamon, nutmeg (if using), and salt. Stir to ensure the ingredients are evenly distributed.

        Mix Together: Pour the blended mixture into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix; it's okay if there are a few lumps. If desired, fold in the chocolate chips or nuts.

          Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each one about 3/4 full.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool Down: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
