Ingredients

4 cups fresh pineapple, diced

1/4 cup fresh mint leaves, plus extra for garnish

4 cups cold water

2 tablespoons agave syrup (or honey, to taste)

Juice of 1 lime

Pinch of salt

Ice cubes for serving

Instructions

Prepare the Pineapple: Start by adding the diced pineapple into a blender. Blend until completely smooth.

Strain the Juice: Using a fine-mesh strainer or cheesecloth, strain the pineapple puree into a large pitcher to remove pulp. Press the mixture to extract as much juice as possible.

Mint Infusion: In the same blender, add the fresh mint leaves, lime juice, and a pinch of salt. Blend until the mint leaves are finely chopped.

Combine Ingredients: In the pitcher with the pineapple juice, stir in the mint mixture and cold water. Add the agave syrup, adjusting the sweetness to your preference.

Chill: Let the agua fresca chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Serve: Fill glasses with ice cubes and pour the chilled pineapple mint agua fresca over the ice. Garnish with additional mint leaves and a pineapple wedge if desired.
