2 cups cooked jasmine rice (preferably day-old)

1 cup diced chicken breast

1 cup fresh pineapple chunks (or canned, drained)

1/2 cup frozen peas and carrots mix

2 eggs, beaten

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

2 tablespoons vegetable oil

2 green onions, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Prepare Ingredients: Ensure your rice is cold and separated (day-old rice works best). Cube the chicken breast and cut the pineapple into bite-sized pieces.

    Cook Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken breast and cook until it's no longer pink in the center, approximately 5-7 minutes. Season with salt and pepper. Remove the chicken and set aside.

      Sauté Aromatics: In the same skillet, add another tablespoon of vegetable oil. Sauté the minced garlic and grated ginger until fragrant, about 30 seconds.

        Add Veggies and Eggs: Toss in the peas and carrots mix, stirring for 2-3 minutes until they are heated through. Push the veggie mix to the side and add the beaten eggs to the skillet, scrambling them until fully cooked.

          Combine Rice and Chicken: Add the cold jasmine rice to the skillet, breaking up clumps. Stir in the cooked chicken and pineapple chunks.

            Add Sauces: Pour in the soy sauce and optional oyster sauce, mixing everything thoroughly to ensure the rice is evenly coated with flavor. Stir-fry for an additional 3-5 minutes, allowing the rice to gain a slight crispiness.

              Finish with Green Onions: Stir in the chopped green onions, adjusting the seasoning with more soy sauce if needed. Let everything cook for another minute or two.

                Serve: Remove from heat, and garnish with fresh cilantro, if desired. Serve with lime wedges on the side for an extra zing!
