2 ripe avocados

1 cup shredded cooked chicken (rotisserie chicken works great)

1/2 cup basil pesto (store-bought or homemade)

1/4 cup cherry tomatoes, halved

1/4 cup mozzarella cheese, shredded

2 tablespoons pine nuts (toasted, for garnish)

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh basil leaves (for garnish)

Instructions
 

Prep the Avocados: Cut the avocados in half and remove the pit. Carefully scoop out a bit of the flesh from the center to create a larger cavity for stuffing. Brush the insides with lemon juice to prevent browning.
