Pesto Chicken Sliders

1 pound ground chicken

1/2 cup homemade or store-bought pesto

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup fresh mozzarella, shredded

Slider buns (8-10 mini buns)

Baby spinach or arugula for topping

Cherry tomatoes, halved, for garnish

Balsamic glaze (optional, for drizzling)

Prepare the Chicken Mixture: In a large bowl, combine the ground chicken, pesto, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined, but do not overwork the meat.

    Form the Patties: Divide the mixture into equal portions and shape them into slider-sized patties, about 2-3 inches in diameter. You should have around 8-10 patties.

      Cook the Patties: Heat a non-stick skillet or grill pan over medium heat. Spray lightly with cooking spray or add a drizzle of olive oil. Cook the patties for about 4-5 minutes on each side or until cooked through and the internal temperature reaches 165°F (75°C). In the last minute of cooking, sprinkle the shredded mozzarella on top of each patty and cover to melt.

        Toast the Slider Buns: While the patties are cooking, slice the slider buns in half. In a separate skillet, lightly toast the buns until golden brown.

          Assemble the Sliders: Place a patty on the bottom half of each slider bun. Top with a handful of fresh spinach or arugula, and add a cherry tomato half for garnish. Optionally, drizzle a little balsamic glaze on top for added flavor.
