Ingredients

2 ripe peaches, sliced

1 red bell pepper, julienned

1 cup snap peas, trimmed

1 small onion, thinly sliced

2 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon vegetable oil (for stir-frying)

Salt and pepper to taste

Fresh basil or mint leaves for garnish (optional)

Cooked rice or quinoa (for serving)

Instructions

Prepare the Ingredients: Ensure all your vegetables and peaches are washed, sliced, and ready to go. This stir fry cooks quickly, so having everything prepped in advance is key.

Make the Sauce: In a small bowl, combine soy sauce, honey or maple syrup, and rice vinegar. Set aside.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Sauté Aromatics: Add the sliced onion and cook for 2-3 minutes until it starts to soften. Add minced garlic and grated ginger, stirring for an additional 30 seconds until fragrant.

Add Vegetables: Toss in the red bell pepper and snap peas. Stir-fry for about 3-4 minutes until the vegetables are vibrant and tender-crisp.

Incorporate Peaches: Add the sliced peaches to the pan and pour in the sauce made in step 2. Stir gently to combine all ingredients, cooking for another 2-3 minutes until the peaches are warmed through and slightly caramelized.

Season: Taste and adjust seasoning with salt and pepper as needed. If you like a bit more sweetness, feel free to drizzle extra honey or syrup.

Serve: Plate the stir fry over cooked rice or quinoa. Garnish with fresh basil or mint if desired, adding a refreshing touch.
