Peach Salsa Black Bean Tacos

2 ripe peaches, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Tacos:

1 can (15 oz) black beans, drained and rinsed

1 tsp cumin

1 tsp chili powder

1 tbsp olive oil

8 small corn tortillas

Crumbled feta or cotija cheese (optional, for topping)

Avocado slices (optional, for topping)

Extra lime wedges (for serving)

Make the Peach Salsa: In a medium bowl, combine the diced peaches, chopped red onion, minced jalapeño, chopped cilantro, lime juice, and season with salt and pepper. Mix gently and set aside to let the flavors meld.

    Prepare the Black Beans: In a skillet over medium heat, add the olive oil. Once heated, add the black beans, cumin, and chili powder. Stir well to coat the beans. Cook for about 5-7 minutes, stirring occasionally, until the beans are heated through and slightly fragrant.

      Warm the Corn Tortillas: In another skillet (or the same one, just wiped clean), warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

        Assemble the Tacos: Start by placing a generous spoonful of the black bean mixture in the center of each tortilla. Top with a spoonful of peach salsa. If using, add crumbled feta or cotija and avocado slices.
