Ingredients

1 cup almond milk (or any milk of your choice)

1/4 cup chia seeds

2 tablespoons maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

1 medium ripe peach, diced

1/2 cup raspberries (fresh or frozen, thawed if frozen)

Optional: toasted almonds or coconut flakes for topping

Fresh mint leaves for garnish

Instructions

Combine the Basics: In a medium-sized mixing bowl, whisk together the almond milk, chia seeds, maple syrup, and vanilla extract. Make sure the chia seeds are evenly distributed and not clumping together.

Refrigerate the Mixture: Cover the bowl with plastic wrap or a lid. Place it in the refrigerator for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and create a pudding-like texture.

Prepare the Fruit Toppings: While the chia pudding is setting, prepare the toppings. Dice the fresh peach and, if using fresh raspberries, rinse and pat them dry.

Layer the Pudding: Once the chia pudding is set, remove it from the refrigerator. In serving glasses or bowls, layer the pudding with the diced peaches and raspberries. For added texture, you can approximately mix half of the fruits into the chia pudding for a colorful effect.

Garnish: Top each serving with the remaining fresh fruits, and if desired, scatter some toasted almonds or coconut flakes for a delightful crunch. Garnish with fresh mint leaves for an aromatic touch.

Serve: Enjoy your Peach Melba Chia Pudding immediately or store leftovers covered in the fridge for up to 2 days.
