Peach Iced Green Tea

4 cups water

4 green tea bags (or 4 teaspoons loose leaf green tea)

2 ripe peaches, pitted and sliced

1/4 cup honey (or to taste)

Juice of 1 lemon

Fresh mint leaves (for garnish)

Boil the Water: Start by bringing 4 cups of water to a boil in a medium saucepan or kettle.

    Steep the Green Tea: Once the water has reached a rolling boil, remove it from heat. Add the green tea bags (or loose leaf tea in a tea infuser) to the hot water. Let it steep for about 3-4 minutes for a smooth flavor. Avoid steeping too long to prevent bitterness.

      Prepare the Peach Syrup: While the tea is steeping, place the sliced peaches and honey in a small saucepan over medium heat. Stir occasionally as the peaches begin to break down and the honey dissolves. Cook for about 5-7 minutes until the peaches are soft and syrupy.

        Strain the Peach Mixture: Remove the peach mixture from heat and strain it through a fine mesh sieve into a bowl, pressing gently with the back of a spoon to extract as much liquid as possible. Discard the solids and set the peach syrup aside.

          Combine Ingredients: Once the green tea has steeped, remove the tea bags or tea infuser. Stir in the fresh lemon juice and the prepared peach syrup. Taste and adjust the sweetness by adding more honey if desired.

            Chill the Tea: Let the tea cool to room temperature before transferring it to the refrigerator. Allow it to chill for at least 1-2 hours, or until thoroughly cold.

              Serve: To serve, fill tall glasses with ice cubes and pour the chilled peach iced green tea over the ice. Garnish with fresh mint leaves and additional peach slices if desired.
