Ingredients

2 pre-made flatbreads (store-bought or homemade)

3 ripe peaches, thinly sliced

1 tablespoon olive oil

1 cup ricotta cheese

3 tablespoons honey (plus more for drizzling)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

¼ teaspoon sea salt

½ cup crumbled goat cheese (optional)

Fresh arugula for garnish

Balsamic glaze for drizzling (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Flatbreads: Place the pre-made flatbreads on a baking sheet lined with parchment paper. Brush each flatbread lightly with olive oil.

Ricotta Mixture: In a small bowl, combine the ricotta cheese, honey (3 tablespoons), fresh thyme, and sea salt. Mix well until smooth.

Assemble the Flatbreads: Spread the ricotta mixture evenly over each flatbread, leaving a small border around the edges. Lay the sliced peaches on top of the ricotta in an even layer.

Add Cheese: If using, sprinkle the crumbled goat cheese evenly over the peaches for added flavor.

Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the edges are golden and the peaches are tender.

Drizzle and Garnish: Once baked, remove the flatbreads from the oven. Drizzle a little extra honey and balsamic glaze over each flatbread (if using), and top with a handful of fresh arugula for a peppery contrast.

Slice and Serve: Cut the flatbreads into slices and serve warm. Enjoy this delightful combination of sweet peaches and creamy ricotta!
