1 cup rolled oats

1 cup almond milk (or milk of choice)

1 ripe peach, diced (plus extra for garnish)

1/2 teaspoon cinnamon

1 tablespoon maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1/4 cup Greek yogurt (optional for creaminess)

1 tablespoon chopped pecans or walnuts (for crunch)

Fresh mint leaves (for garnish)

Instructions
 

In a medium bowl, combine the rolled oats and almond milk. Stir well to ensure the oats are fully submerged in the liquid.

    Add the diced peach, cinnamon, maple syrup, and vanilla extract to the oats. Mix until all ingredients are well combined.
