4 medium zucchinis, spiralized into noodles

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

¾ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the spiralized zucchini noodles and cook for 3-5 minutes until they start to soften. Stir in the chopped spinach and cherry tomatoes, cooking for another 2 minutes. Season with salt, pepper, and red pepper flakes if using.

      Prepare the Cheese Mixture: In a mixing bowl, combine ricotta cheese, half of the shredded mozzarella cheese, and half of the grated Parmesan cheese. Add Italian seasoning and mix well until smooth.

        Combine Ingredients: In a large baking dish, layer half of the sautéed zucchini mixture. Spread half of the ricotta cheese mixture on top. Then, repeat with the remaining zucchini mixture and the rest of the ricotta cheese mixture.

          Add Cheese Topping: Top the final layer with the remaining mozzarella cheese and Parmesan cheese evenly spread over the top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Cut into squares and serve warm.
