Oven Roasted Garlic Tomato Soup

2 lbs ripe tomatoes, halved

1 bulb garlic, top sliced off

1 medium onion, chopped

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon sugar (optional)

Salt and pepper to taste

3 cups vegetable or chicken broth

1 cup heavy cream or coconut milk (for a vegan option)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes and Garlic: Place the halved tomatoes and the chopped onion on a baking sheet. Drizzle with olive oil, and sprinkle the thyme, basil, salt, and pepper. Take the bulb of garlic, drizzle it with a little olive oil, wrap it in aluminum foil, and place it on the baking sheet.

      Roast the Vegetables: Roast the tomatoes, onions, and garlic in the oven for about 30-35 minutes, or until the tomatoes are soft and slightly caramelized.

        Extract the Garlic: Once roasted, allow the garlic to cool slightly. Squeeze the roasted garlic cloves out of their skins and set aside.

          Blend the Soup: In a large pot, combine the roasted tomatoes, onion, and squeezed garlic. Pour in the vegetable or chicken broth. If desired, add the teaspoon of sugar to balance acidity. Use an immersion blender to puree the mixture until smooth. Alternatively, you can transfer it to a blender in batches.

            Add Cream: Stir in the heavy cream or coconut milk into the blended soup. Heat over medium heat until warmed through. Adjust seasoning with additional salt and pepper as needed.

              Serve: Ladle the soup into bowls and garnish with fresh basil leaves. Serve hot with crusty bread or a grilled cheese sandwich for a complete meal!
