One-Pot Taco Rice and Beans

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 pound ground beef or turkey (or plant-based alternative)

1 tablespoon taco seasoning (store-bought or homemade)

1 cup long-grain white rice, rinsed

2 cups vegetable or chicken broth

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

Salt and pepper to taste

Fresh cilantro, for garnish

Shredded cheese (optional), for serving

Avocado or sour cream (optional), for serving

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft and translucent, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

    Brown the Meat: Add the ground beef or turkey to the pot. Break it apart with a wooden spoon, cooking until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Spice It Up: Sprinkle the taco seasoning over the meat mixture, stirring well to combine. This will infuse all the flavors into the meat.

        Combine the Ingredients: Add the rinsed rice, broth, black beans, diced tomatoes (with juices), and corn to the pot. Stir everything together until well combined. Bring the mixture to a boil.

          Cook the Rice: Once boiling, reduce the heat to low. Cover the pot with a lid and let it simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed. Avoid lifting the lid while it cooks.

            Fluff and Serve: After the cooking time, remove the pot from heat and let it sit covered for another 5 minutes. Remove the lid and fluff the rice with a fork. Season with salt and pepper to taste.
