1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

2 tablespoons olive oil

1 cup fresh spinach, chopped

2 large eggs (optional, for serving)

Fresh parsley, chopped (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Prepare the Ingredients: Begin by peeling and dicing the sweet potatoes, as well as dicing the bell peppers and onion. Mince the garlic and chop the spinach. Set aside.

    Cook the Turkey: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the ground turkey, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper, then transfer the turkey to a plate and keep warm.

      Sauté Vegetables: In the same skillet, add a bit more olive oil if necessary, then add the diced sweet potatoes. Cook for about 10-12 minutes, stirring occasionally, until they start to soften and turn golden. If they begin to stick, add a splash of water to help steam them.

        Add Onions and Peppers: Stir in the diced onion and both bell peppers, cooking for an additional 5-7 minutes or until they are softened. Add the minced garlic, smoked paprika, and cumin, stirring for another minute until fragrant.

          Combine Turkey and Spinach: Return the cooked turkey to the skillet, mixing it with the vegetables. Add the chopped spinach and stir until wilted, about 2 minutes. Adjust seasoning with more salt and pepper if needed.

            Optional Eggs: If desired, create little wells in the hash and crack an egg into each well. Cover the skillet and cook until the egg whites are set and yolks are still runny, approximately 5 minutes (or longer if you prefer firmer yolks).

              Serve: Garnish the hash with fresh parsley and serve immediately. Drizzle with hot sauce for an extra kick, if desired.
