Ingredients

4 salmon fillets (about 6 ounces each)

1 bunch of fresh asparagus, trimmed

3 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let them sit for about 10-15 minutes to absorb the flavors.

Arrange Asparagus: While the salmon is marinating, spread the trimmed asparagus on a large baking sheet. Drizzle with the remaining tablespoon of olive oil and season with salt and pepper, tossing to coat evenly.

Place Salmon on Baking Sheet: After marinating, place the salmon fillets skin-side down on the baking sheet alongside the asparagus.

Bake: Pour any remaining marinade over the salmon and asparagus. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender but still vibrant green.

Garnish and Serve: Remove the pan from the oven and sprinkle with fresh parsley. Serve immediately with lemon wedges on the side for an extra burst of flavor.
