One-Pan Lemon Garlic Shrimp and Broccoli

1 lb (450g) large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1 medium lemon (zest and juice)

1/4 cup olive oil

1 tsp smoked paprika

1/2 tsp red pepper flakes (adjust for spice preference)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

1 cup cooked quinoa or rice (optional for serving)

Instructions
 

Prepare the Shrimp: In a bowl, combine the shrimp with lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and black pepper. Toss to coat well and let marinate for about 10 minutes.

    Cook the Broccoli: In a large skillet or frying pan, heat 2 tablespoons of olive oil over medium heat. Add the broccoli florets and sauté for about 4-5 minutes until they turn bright green but are still crisp. Remove the broccoli from the pan and set aside.

      Sauté Garlic: In the same pan, add the remaining 2 tablespoons of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Cook the Shrimp: Add the marinated shrimp to the pan in a single layer. Cook for about 2-3 minutes on one side until they start to turn pink. Flip the shrimp and add the cooked broccoli back into the pan, cooking for another 2 minutes until the shrimp are fully cooked and opaque.

          Combine and Serve: Remove the pan from heat. Sprinkle with fresh parsley and adjust seasoning if needed. Serve the shrimp and broccoli over a bed of quinoa or rice, or enjoy it on its own.
