One-Pan Lemon Garlic Salmon with Asparagus

4 (6 oz) salmon fillets, skin-on

1 lemon, zested and juiced

4 cloves garlic, minced

1 lb asparagus, trimmed

3 tablespoons olive oil, divided

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, mix together the lemon zest, lemon juice, minced garlic, 2 tablespoons of olive oil, oregano, paprika, salt, and pepper.

      Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, making sure each fillet is well coated. Allow to marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).

        Prepare the Asparagus: While the salmon is marinating, place the trimmed asparagus on a large baking sheet. Drizzle with the remaining 1 tablespoon of olive oil and sprinkle with salt and pepper. Toss to coat.

          Arrange on Baking Sheet: After marinating, remove the salmon from the dish and place it skin-side down on the baking sheet next to the asparagus.

            Bake: Roast everything in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender and slightly crisp.
