1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 cup cheddar cheese, shredded (plus extra for topping)

1/2 cup parmesan cheese, grated

1 medium onion, chopped

3 cloves garlic, minced

1 cup chicken broth

1/2 cup heavy cream

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1/2 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Skillet: In a large skillet over medium heat, add the olive oil and let it warm up for about 1 minute.

    Cook the Chicken: Add the diced chicken to the skillet. Season with salt, pepper, paprika, and Italian seasoning. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and fully cooked. Remove chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add garlic and sauté for another minute until fragrant.

        Add Broccoli: Toss in the broccoli florets and cook for about 3-4 minutes until they start to soften. If using frozen broccoli, make sure to stir until heated through.

          Create the Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
