4 boneless, skinless chicken thighs

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, diced

3 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 cup BBQ sauce (your choice of flavor)

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chicken: In a large bowl, coat the chicken thighs with 1/2 cup of BBQ sauce, smoked paprika, cumin, salt, and pepper. Set aside to marinate while you prep the vegetables.

      Prepare Vegetables: In a large oven-safe skillet or a cast-iron pan, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally until they begin to soften.

        Add Onions and Peppers: Stir in the diced red onion, red, and green bell peppers. Sauté for an additional 5 minutes until vegetables are tender.

          Incorporate Corn and Garlic: Add the garlic and corn to the skillet, mixing everything together. Cook for another 2-3 minutes until the garlic is fragrant.

            Add the Chicken: Nestle the marinated chicken thighs on top of the sweet potato and vegetable mixture, pouring the remaining BBQ sauce over the chicken.

              Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
