4 chicken thighs (bone-in, skin-on for extra flavor)

2 large sweet potatoes, peeled and cut into 1-inch cubes

1 red bell pepper, sliced

1 yellow onion, sliced

1 cup of barbecue sauce (homemade or store-bought)

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare Vegetables: In a large bowl, toss the sweet potatoes, red bell pepper, and onion with 1 tablespoon of olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Make sure they are well coated.

      Season Chicken: Pat the chicken thighs dry with paper towels. In a separate bowl, rub the chicken with the remaining olive oil, salt, and pepper.

        Combine Ingredients: In a large oven-safe skillet or a baking dish, arrange the seasoned sweet potatoes and vegetables evenly on the bottom. Nestle the chicken thighs on top of the veggies.

          Add BBQ Sauce: Pour the barbecue sauce over the chicken thighs, ensuring the sauce coats them well. Reserve a little sauce for glazing later, if desired.

            Bake: Place the skillet or baking dish in the preheated oven and bake for 35-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the sweet potatoes are tender. If you want a crispy skin, broil for an additional 3-5 minutes at the end of cooking.
