1 cup finely grated zucchini (packed and moisture squeezed out)

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey (or maple syrup for vegan option)

1/4 cup ground flaxseed

1 tsp vanilla extract

1/2 tsp cinnamon

1/2 cup mini chocolate chips (optional)

A pinch of sea salt

Coconut flakes or chopped nuts for rolling (optional)

Instructions
 

Prepare the Zucchini: Start by washing and trimming the ends of the zucchini. Using a grater, finely grate the zucchini and then place it in a clean kitchen towel. Squeeze out excess moisture to prevent the energy bites from being too wet.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground flaxseed, cinnamon, and a pinch of sea salt. Mix well until evenly distributed.

      Combine Wet Ingredients: In another bowl, mix the grated zucchini, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and completely combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredient mixture. Add the mini chocolate chips if using. Stir until all the ingredients are well incorporated, and the mixture is sticky but holds together.

          Shape the Bites: Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into balls. If you’d like, you can roll them in coconut flakes or chopped nuts for an extra layer of flavor and texture.
