1 cup rolled oats

1 cup mixed nuts (almonds, walnuts, cashews)

1/2 cup seeds (pumpkin seeds, sunflower seeds)

1/2 cup dried fruit (raisins, cranberries, or chopped apricots)

1/2 cup natural peanut butter (or almond butter)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

Instructions
 

Prepare the Pan: Line an 8x8-inch square baking pan with parchment paper, letting the paper hang over the edges to make it easy to lift the bars out later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, seeds, dried fruit, and salt. Stir to evenly distribute all the dry ingredients.

      Combine Wet Ingredients: In a small saucepan over low heat, add the peanut butter, honey (or maple syrup), and vanilla extract. Heat gently while stirring until the mixture is smooth and well combined. Remove from heat.

        Combine Dry and Wet Ingredients: Pour the warm peanut butter mixture over the dry ingredients in the mixing bowl. Use a spatula or wooden spoon to mix thoroughly, ensuring all the dry ingredients are well coated. If using, fold in the chocolate chips at this stage.

          Press into Pan: Transfer the mixture into the prepared baking pan. Press down firmly using the back of a spatula or your hands to create an even layer. Make sure it's compact, as this will help the bars hold together once set.

            Chill and Set: Place the pan in the refrigerator for at least 2 hours to allow the bars to set.

              Cut and Serve: Once set, lift the bars out of the pan using the parchment paper. Cut into squares or rectangles using a sharp knife. Store any leftovers in an airtight container in the refrigerator for up to 1 week.
