Ingredients

1 cup fresh blueberries

1 cup fresh strawberries, sliced

1 cup Greek yogurt (vanilla or plain)

1/2 cup cream cheese, softened

1/3 cup honey or maple syrup, to taste

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Divide the mixture evenly into four serving cups or small bowls. Use the back of a spoon to press the mixture down firmly to create a crust layer.

Make the Lemon Filling: In another bowl, beat the softened cream cheese with a hand mixer until smooth. Add the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract. Mix until the mixture is creamy and well combined.

Assemble the Cups: Spoon the lemon filling over the graham cracker crust in each cup, filling them to the top. Leave a small space for the berries.

Add the Berries: Evenly distribute the fresh blueberries and sliced strawberries over the lemon filling in each cup. You can mix them gently if desired or layer them for a beautiful presentation.

Chill and Serve: Place the assembled cups in the refrigerator for at least 30 minutes to allow the flavors to meld and the filling to set slightly.

Garnish: Just before serving, garnish with fresh mint leaves for an extra pop of color and freshness.
