Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/3 cup honey or maple syrup

1/2 cup finely chopped dried apricots

1/4 cup shredded coconut (unsweetened)

1/4 cup sunflower seeds

1/4 cup chia seeds

1/2 teaspoon vanilla extract

A pinch of sea salt

Optional: 1/4 cup mini chocolate chips or cacao nibs

Instructions
 

In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well combined.

    Add in the chopped dried apricots, shredded coconut, sunflower seeds, chia seeds, vanilla extract, and sea salt. Mix thoroughly to ensure all ingredients are evenly distributed.

      If you're using mini chocolate chips or cacao nibs, fold them into the mixture at this point.

        Once all ingredients are well mixed, use your hands to form small bite-sized balls (about 1 inch in diameter).

          Place the formed energy bites on a baking sheet lined with parchment paper, leaving a little space between each for easy storage.

            Refrigerate the energy bites for at least 30 minutes to allow them to firm up.

              Once chilled, transfer the bites to an airtight container for storage. They can be kept in the refrigerator for up to a week or in the freezer for longer shelf life.
