1 ½ cups shredded unsweetened coconut

1 cup almond flour

½ cup maple syrup or honey

¼ cup coconut oil, melted

2 teaspoons pure vanilla extract

Zest of 2 lemons

½ cup fresh lemon juice (about 2-3 lemons)

½ teaspoon sea salt

Optional: Extra shredded coconut for topping

Prepare the Base: In a large mixing bowl, combine the shredded coconut, almond flour, melted coconut oil, maple syrup (or honey), and vanilla extract. Stir until the mixture is well combined and resembles a dough.

    Add the Zest and Juice: Fold in the lemon zest, fresh lemon juice, and sea salt. Mix thoroughly until everything is evenly incorporated.

      Shape the Mixture: Line an 8x8-inch (20x20cm) square baking dish with parchment paper, letting a bit of the paper hang over the edges for easy removal. Transfer the coconut-lemon mixture into the prepared dish. Press it firmly down using the back of a spatula until it’s evenly packed.

        Chill: Place the baking dish in the refrigerator for at least 1-2 hours to set. If desired, sprinkle extra shredded coconut on top before chilling for added texture.

          Serve: Once set, lift the squares out using the parchment paper and cut into equal-sized squares. Enjoy chilled or at room temperature!
