1 cup pitted Medjool dates

1 cup unsweetened shredded coconut (plus extra for rolling)

1/2 cup rolled oats

1/4 cup almond butter (or any nut/seed butter of your choice)

1 tablespoon coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: 1-2 tablespoons dark chocolate chips or cacao nibs

Instructions
 

Prepare the Dates: In a food processor, combine the pitted Medjool dates with almond butter, melted coconut oil, vanilla extract, and sea salt. Blend until the mixture is smooth and sticky.

    Add Dry Ingredients: Add the shredded coconut and rolled oats to the date mixture. If you're using chocolate chips or cacao nibs, add them at this point as well. Pulse the food processor a few times until everything is well combined but still has some texture.

      Shape the Bites: Using your hands, take small amounts of the mixture and roll them into bite-sized balls (about 1 inch in diameter). Make sure to pack them tightly to help them hold their shape.

        Coat with Coconut: Roll each ball in the extra shredded coconut to coat the outside. This step adds an extra layer of flavor and makes them look pretty!

          Chill: Place the coconut date bites on a parchment-lined tray and refrigerate for at least 30 minutes. This helps them firm up and makes them easier to handle.
