Ingredients

2 cups rolled oats

1 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/2 cup dark chocolate chips

1/4 cup chopped nuts (walnuts or almonds, optional)

1/4 cup shredded coconut (optional)

A pinch of salt

1 tsp vanilla extract

Instructions

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.

Mix Wet Ingredients: In a mixing bowl, combine the almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Microwave the mixture for about 20-30 seconds until it's warm and easier to mix. Stir until well combined.

Add Cocoa Powder: Sift in the cocoa powder, mixing well until fully incorporated and smooth.

Combine Dry Ingredients: In a separate bowl, combine the rolled oats, chopped nuts, and shredded coconut (if using). Mix thoroughly to ensure the dry ingredients are evenly distributed.

Combine Mixtures: Fold the dry ingredients into the wet ingredient mixture, stirring until everything is well combined. If the mixture seems too dry, you can add a little more honey or almond butter.

Add Chocolate Chips: Gently fold in the dark chocolate chips until evenly dispersed throughout the mixture.

Press into Pan: Transfer the mixture into the prepared baking dish. Use a spatula or your hands to press the mixture down firmly and evenly into the pan.

Chill: Place the baking dish in the refrigerator for at least 2 hours to allow the mixture to firm up.

Cut & Serve: Once set, use the parchment paper to lift the bars out of the dish. Cut into squares or rectangles. Enjoy as a quick snack or a healthy dessert!
