Ingredients

1 cup unsweetened shredded coconut

1 cup chocolate wafers or graham cracker crumbs

1/2 cup almond flour (or ground almonds)

1/4 cup maple syrup or honey

1/4 cup melted coconut oil

1 teaspoon vanilla extract

1/4 teaspoon sea salt

3/4 cup dark chocolate chips (or dairy-free chocolate chips)

Optional: extra shredded coconut for topping

Instructions

Prepare the Base: In a mixing bowl, combine the unsweetened shredded coconut, chocolate wafers (or graham cracker crumbs), and almond flour. Mix well until evenly combined.

Add Wet Ingredients: Pour in the maple syrup, melted coconut oil, vanilla extract, and sea salt. Mix everything together until you have a sticky, cohesive mixture.

Mold the Cups: Line a muffin tin with cupcake liners. Using your hands or a spoon, press the coconut mixture firmly into the bottom of each liner, forming a small cup shape. Make sure the sides are well-formed to hold the filling later.

Chill the Base: Place the muffin tin in the refrigerator for about 15-20 minutes, allowing the coconut cups to set while you prepare the chocolate layer.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring between each interval until smooth and creamy.

Fill the Cups: Once the base has set, remove the muffin tin from the refrigerator. Carefully pour or spoon the melted chocolate over each coconut cup, filling them almost to the top.

Set the Tops: If desired, sprinkle extra shredded coconut on top of the melted chocolate for a decorative touch. Place the muffin tin back in the refrigerator and allow the cups to chill for another 30-40 minutes, or until the chocolate is fully set.

Serve and Enjoy: Once the chocolate has hardened, gently remove the cups from the muffin tin. Serve them chilled or at room temperature. Enjoy your delightful No-Bake Chocolate Coconut Cups!
