1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 1/2 cups fresh blueberries

2 tablespoons lemon juice

Additional blueberries and mint leaves for garnish (optional)

Instructions
 

Prepare the crust:

    In a medium bowl, mix the graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the mixture resembles wet sand. Evenly distribute the crust mixture into the bottom of 6 serving cups, pressing down firmly to create a solid base.

      Make the cheesecake filling:

        In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.

          Whip the cream:

            In a separate bowl, whip the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until there are no visible streaks. Be careful not to deflate the whipped cream.

              Combine with blueberries:

                In a small bowl, mix the fresh blueberries with lemon juice. Fold the blueberry mixture into the cheesecake mixture gently, reserving some whole blueberries for topping.

                  Assemble the cups:

                    Spoon the cheesecake filling over the crust in each cup, filling them generously. Tap the cups lightly on the counter to remove any air bubbles and smooth the tops.

                      Chill:

                        Cover the cups with plastic wrap and refrigerate for at least 4 hours or until set. For best results, chill overnight.
