1 ½ cups crushed graham crackers

½ cup finely chopped almonds

⅓ cup unsweetened cocoa powder

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped topping (like Cool Whip)

1 cup shredded sweetened coconut

½ cup chopped almonds, for topping

For the chocolate ganache:

1 cup semi-sweet chocolate chips

½ cup heavy cream

Prepare the crust: In a large mixing bowl, combine the crushed graham crackers, finely chopped almonds, cocoa powder, melted butter, and granulated sugar. Mix until everything is well combined and has a damp sand-like texture. Press this mixture firmly into the bottom of a lined 9x9-inch baking dish. Use the back of a measuring cup to create an even layer. Chill in the refrigerator while preparing the filling.

    Make the cheesecake filling: In a separate large bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully integrated. Gently fold in the whipped topping with a spatula until no streaks remain. Finally, fold in the shredded coconut until evenly distributed.

      Assemble the bars: Remove the graham cracker crust from the refrigerator and pour the cheesecake filling over the crust. Spread it evenly with a spatula. Tap the dish lightly on the counter to remove any air bubbles. Sprinkle the top with the chopped almonds and gently press them into the cheesecake filling. Return to the refrigerator for at least 3-4 hours to set.
