Ingredients
  

4 boneless, skinless chicken breasts

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small zucchini, chopped

1 cup cherry tomatoes, halved

1 cup marinara sauce

1 teaspoon balsamic vinegar

1 cup fresh basil leaves, roughly chopped

1 cup mozzarella cheese, shredded

Instructions
 

Prepare the Chicken: Season the chicken breasts with Italian seasoning, salt, and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the minced garlic, sliced red and yellow bell peppers, and chopped zucchini. Sauté for about 4-5 minutes until the vegetables are just tender.

        Add Tomatoes and Sauce: Stir in the halved cherry tomatoes and marinara sauce. Add the balsamic vinegar and mix well. Let the sauce simmer for about 3-4 minutes.

          Return the Chicken: Nestle the seared chicken breasts back into the skillet, spooning some of the sauce over the top.

            Add Cheese and Basil: Sprinkle the shredded mozzarella cheese over the chicken. Cover the skillet with a lid and let it cook for an additional 3-5 minutes, until the cheese is melted. Remove from heat and stir in the fresh basil.

              Serve: Serve hot, garnished with extra basil leaves if desired, over cooked pasta or with crusty bread to soak up the delicious sauce.
