2 medium zucchinis, grated

4 large eggs

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1/4 cup milk

1 clove garlic, minced

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

4 slices of whole-grain bread

Fresh basil or parsley for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: In a bowl, mix the grated zucchini with a pinch of salt and let it sit for about 10 minutes. This helps draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove additional liquid.

      Make the Egg Mixture: In a separate bowl, whisk together the eggs, grated Parmesan, shredded mozzarella, milk, minced garlic, onion powder, and add salt and pepper to taste.

        Combine Ingredients: Fold the drained zucchini into the egg mixture until well incorporated.

          Prepare the Toasts: Heat the olive oil in a skillet over medium heat. Toast the bread slices lightly in the skillet, about 1-2 minutes on each side, until golden brown. You can also use a toaster if preferred.
