1 cup zucchini, finely grated and squeezed dry

1 cup sharp cheddar cheese, shredded

3 large eggs

1/2 cup heavy cream

1/4 cup milk

1/2 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 package (1 sheet) refrigerated pie crust or phyllo dough

Cooking spray or olive oil for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or a drizzle of olive oil.

    Prepare the Dough: Roll out the pie crust or phyllo dough on a lightly floured surface. If using pie crust, use a round cookie cutter or glass to cut out circles slightly larger than the mini muffin tin cups. If using phyllo dough, layer a couple of sheets, brushing each layer with olive oil, then cut into squares.

      Place the Dough: Press the dough circles into the muffin tin cups, ensuring they fit snugly and cover the sides. Use a fork to dock the bottom of the crusts to prevent them from puffing up.

        Make the Filling: In a mixing bowl, whisk together the eggs, heavy cream, and milk until well combined. Stir in the grated zucchini, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and black pepper. Mix until everything is evenly incorporated.

          Fill the Dough Cups: Pour the zucchini mixture into each prepared crust, filling until just shy of the top (about ¾ full) to allow room for expansion.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the quiches are puffed and golden brown. A toothpick inserted into the center should come out clean.

              Cool and Serve: Remove from the oven and let the mini quiche bites cool in the pan for about 5 minutes. Carefully run a knife around the edges to loosen them, then remove from the muffin tin. Serve warm or at room temperature.
