1 pound ground turkey

1 tablespoon olive oil

1 medium onion, finely diced

2 cloves garlic, minced

1 tablespoon taco seasoning

1 cup canned diced tomatoes (with juices)

1 can black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 lime, juiced

Salt and pepper, to taste

1 head of butter lettuce (or iceberg), leaves separated and washed

Toppings: diced avocado, shredded cheese, chopped cilantro, sliced jalapeños, and sour cream

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, until fragrant.

    Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until the turkey is no longer pink, about 5-7 minutes.

      Season and Simmer: Stir in the taco seasoning, diced tomatoes (with juices), black beans, corn, lime juice, salt, and pepper. Mix until everything is well combined. Bring to a simmer and reduce the heat to low. Allow it to cook for another 5-10 minutes to let the flavors meld.

        Prepare the Lettuce Cups: While the turkey mixture is simmering, prepare your lettuce leaves by washing and drying them. Choose the largest leaves for sturdier cups.

          Assemble the Cups: Spoon a generous amount of the turkey mixture into each lettuce leaf. Top with your choice of diced avocado, shredded cheese, chopped cilantro, sliced jalapeños, and a dollop of sour cream.
