Mini Turkey Pita Pockets with Hummus

1 lb ground turkey

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

4 whole wheat pita pockets

1 cup hummus (store-bought or homemade)

1 medium cucumber, diced

1 cup cherry tomatoes, halved

½ cup shredded lettuce

¼ cup crumbled feta cheese (optional)

Fresh parsley for garnish

Cook the Turkey: In a skillet over medium heat, add olive oil. Once hot, add the ground turkey. Use a wooden spoon to break it into crumbles. Cook for about 5-7 minutes until browned and cooked through.

    Season the Meat: Add garlic powder, onion powder, smoked paprika, salt, and black pepper to the turkey. Stir well to combine and cook for an additional 2-3 minutes to let the flavors meld. Remove from heat and set aside to cool slightly.

      Prep the Pitas: While the turkey is cooking, slice the pita pockets in half to create two “pockets” from each pita. If desired, warm the pita halves in a toaster or on a pan for about 1-2 mins for better texture.

        Assembly: Take a pita half and spread about 2 tablespoons of hummus inside. Fill with a generous portion of the cooked turkey mixture, and then add diced cucumber, halved cherry tomatoes, shredded lettuce, and crumbled feta cheese if using.

          Garnish: Sprinkle fresh parsley over the filled pita pockets for added flavor and visual appeal.

            Serve: Arrange the mini turkey pita pockets on a serving platter, and serve with extra hummus on the side for dipping. Enjoy warm or at room temperature!
