Mini Taco Pie Puff Pastries

1 package (17.3 oz) frozen puff pastry sheets (2 sheets), thawed

1 lb ground beef (or turkey for a lighter option)

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning mix (approximately 1 oz)

1 cup diced tomatoes (canned or fresh)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1 egg, beaten (for egg wash)

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Sliced jalapeños (optional, for serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.

    Cook the Filling: In a large skillet over medium heat, add the ground beef and cook until browned (about 5-7 minutes). Drain any excess fat. Add the chopped onions and minced garlic, and sauté until softened, approximately 3 minutes.

      Season the Meat: Stir in the taco seasoning mix, diced tomatoes, and black beans. Mix well and let cook for another 2-3 minutes until heated through. Remove from heat and set aside to cool slightly.

        Prepare the Puff Pastry: On a lightly floured surface, roll out each thawed puff pastry sheet to about 1/8 inch thick. Cut each sheet into 4 squares (totaling 8 squares).

          Fill the Pastry: Place about 2 tablespoons of the meat mixture in the center of each square. Sprinkle 1 tablespoon of shredded cheddar cheese over the top of the meat filling.

            Seal the Pastries: Fold the pastry squares into triangles, pressing the edges together to seal. Use a fork to crimp the edges for a decorative touch and enhanced sealing.

              Egg Wash: Transfer the filled pastries to the prepared baking sheet. Brush the tops with the beaten egg for a shiny finish.

                Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pastries are puffed and golden brown.
