6 large eggs

½ cup milk (or dairy-free alternative)

1 cup roasted red peppers, chopped

½ cup feta cheese, crumbled

¼ cup fresh spinach, finely chopped

¼ teaspoon garlic powder

¼ teaspoon onion powder

Salt and black pepper, to taste

¼ teaspoon red pepper flakes (optional for a kick)

Olive oil spray (for greasing the muffin tin)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a mini muffin tin with olive oil spray.

    Whisk the Eggs: In a mixing bowl, crack the eggs and add the milk. Whisk together until well combined and slightly foamy.

      Add Seasonings: Stir in garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) into the egg mixture. Mix until the seasonings are evenly distributed.

        Mix in the Veggies: Gently fold in the chopped roasted red peppers, spinach, and crumbled feta cheese until evenly distributed throughout the egg mixture.

          Fill the Muffin Tin: Pour the egg mixture into the prepared mini muffin tin, filling each cup about ¾ full to allow for rising.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are puffed up and firm to the touch.

              Cool and Serve: Once done, remove from the oven and let the bites cool in the pan for a few minutes before carefully removing them with a small spatula. Serve warm or at room temperature.

                Store: If you have leftovers, store them in an airtight container in the refrigerator for up to 5 days.
