Mini Quinoa Stuffed Zucchini Rings

Ingredients
  

2 medium zucchinis

1 cup cooked quinoa

1/2 cup cherry tomatoes, diced

1/4 cup red bell pepper, finely chopped

1/4 cup shredded mozzarella cheese

2 tablespoons fresh basil, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for heat

Instructions
 

Prepare the Zucchini: Cut both ends off the zucchinis and slice them into 1-inch thick rings. Using a small spoon or a melon baller, scoop out the center of each zucchini ring, creating a small cavity without puncturing the base. Set aside.

    Preheat Oven: Preheat your oven to 375°F (190°C).

      Prepare the Filling: In a mixing bowl, combine the cooked quinoa, diced cherry tomatoes, red bell pepper, mozzarella cheese, fresh basil, olive oil, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well combined.

        Stuff the Zucchini: Carefully fill each zucchini ring with the quinoa filling, pressing down gently to pack it in nicely.

          Arrange for Baking: Place the stuffed zucchini rings on a baking sheet lined with parchment paper. If any filling spills over, that’s okay!

            Bake: Bake in the preheated oven for 15-20 minutes, or until the zucchinis are tender and the tops are slightly golden.

              Serve: Remove from the oven and let cool for a couple of minutes. Serve warm, optionally garnished with extra basil or a drizzle of balsamic glaze.
