Mini Ice Cream Pies

Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

2 cups ice cream (your choice of flavor)

½ cup whipped cream

½ cup chocolate syrup

½ cup mini chocolate chips (or your favorite toppings)

Fresh fruit or nuts for garnish (optional)

Instructions
 

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until all crumbs are well coated.

    Form the pie crusts: Press the mixture firmly into the bottoms and up the sides of a mini tart pan or muffin tin, creating 8 mini crusts. Refrigerate for about 15 minutes to set.

      Add ice cream: Scoop your chosen ice cream into a bowl and allow it to soften slightly. Once softened, mix in chocolate chips or any other mix-ins you'd like.

        Fill the crusts: Spoon the ice cream mixture into the chilled crusts, filling them to the top. Smooth the tops with a spatula for an even finish.

          Freeze the mini pies: Cover the filled pies with plastic wrap and place them in the freezer. Freeze for at least 4 hours or until completely solid.

            Prepare the topping: Just before serving, take the mini pies out of the freezer. Top each pie with a dollop of whipped cream, a drizzle of chocolate syrup, and additional toppings like fresh fruit or nuts, if desired.

              Serve: Carefully remove the mini pies from the tart pan or muffin tin. Allow them to thaw for about 5 minutes, then serve immediately and enjoy!
